About The Role
We are looking a passionate and experienced Head Sommelier to lead our wine program across both The Atlantic Restaurant and The Den Basement Bar. This role offers the chance to curate an extensive wine list that complements our seafood offerings, enhance guest experiences through expert pairings, and lead a team dedicated to excellence in service.​

Key Responsibilities:

  • Curate and manage an extensive wine list that aligns with our seafood-centric menu and The Den's cocktail offerings.

  • Oversee wine inventory, procurement, and cellar management.

  • Train and mentor the sommelier team and front-of-house staff in wine knowledge and service.

  • Collaborate with the culinary and bar teams to develop harmonious food and beverage pairings.

  • Engage with guests to provide personalised wine recommendations and enhance their dining experience.

  • Stay abreast of industry trends to introduce innovative offerings.​

About You
You will have proven experience as a Head Sommelier or Senior Sommelier in a premium dining environment in addition to:

  • Extensive knowledge of global wine regions, varietals, and vintages.

  • Strong leadership and team management skills.

  • Excellent communication and interpersonal abilities.

  • Formal sommelier certification (e.g., WSET Level 3 or equivalent) is highly regarded.​

  • Excellent grooming & presentation, reliable with a friendly attitude and great smile.

  • Right to work in Australia.

  • The flexibility to work a rotating roster, including evenings, weekends, and weekdays.
